Noodle soup is a common dish across East Asia, Southeast Asia and the Himalayan states of South Asia. Various types of noodles can be used. The oldest known record of noodles dates back to the Han dynasty of China and describes a noodle soup dish called tang bing. Archaeological evidence for noodles in China goes back thousands of years earlier, but it is unknown whether these early noodles were consumed in soup.
