About this dish

Baek-kimchi (Korean: 백김치) or white kimchi is a variety of kimchi made without the chili pepper powder commonly used for fermenting kimchi in Korean cuisine. Baek kimchi has a mild and clean flavor, which appeals to children and the elderly, to whom the regular kimchi might be too spicy. Baek kimchi consists of salted napa cabbage, radish, minari, spring onions, Korean pear, chestnuts, jujube, ginger, garlic, salt, sugar, and a little bit of chili threads as garnish. Baek kimchi's mild flavor and crunchy texture makes it a good appetizer when people order main dishes consisting of beef such as galbi or bulgogi at Korean restaurants. It is also used as a wrap for baek kimchi bossam.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the top off the tomato and scoop out the inside.
  2. Wash the cucumber clean with salt.
  3. Roast the salt in a pan and brine the cabbage with it.
  4. Put the cucumber and radish in the brined cabbage and roll it up.
  5. Put the roll from (4) into the hollowed tomato.
  6. Put the stuffed tomatoes in a container, pour in salt brine, and add the onion, garlic, and ginger.
💡 TipRoasting the salt and using it for the kimchi liquid lowers the sodium and lets you taste the sweetness.
