Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Mix all ingredients except the butter, then add the butter and mix to the final stage. Add the fillings to the mixed dough and combine evenly.
- After a 30-minute first rise, punch the dough and let it rise for another 35 minutes. * Punching means releasing the gas.
- Divide into 200 g pieces and let them rest for 20 minutes (intermediate proof).
- Shape the rested dough into rounds.
- Spray with water, dust with flour, and let rise for 50 minutes (second rise).
- Score an X shape and bake at 195°C for 12 minutes with 5 seconds of steam. * A thin razor blade works well for scoring.
💡 TipWe made a healthy bread using a pate fermentee, which is baguette dough fermented at a low temperature for a day.
