Salad of romaine lettuce and croutons
About this dish
A Caesar salad (also spelled Cesar, César and Cesare), also known as Caesar's salad, is a green salad of romaine lettuce and croutons commonly dressed with lemon juice (or lime juice), olive oil, eggs, Worcestershire sauce, anchovies, garlic, Dijon mustard, Parmesan and black pepper. The salad was created on July 4, 1924, by Caesar Cardini at Caesar's in Tijuana, Mexico, when the kitchen was overwhelmed and short on ingredients. It was originally prepared tableside, and it is still prepared tableside at the original venue.

Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Separate the lettuce leaves, wash well, remove the moisture, cut into suitable sizes, and store in the refrigerator.
- Make the croutons and store separately until serving.
- Make a paste with the garlic, anchovies, salt, and pepper, then mix in the egg yolk and lemon juice.
- Add olive oil to step 3 until thick, then add the Parmesan cheese and lettuce and toss well.
- Cut the sea bream into finger-length pieces, season with salt and pepper, coat with flour, beaten egg, and breadcrumbs in that order, and fry in oil at about 170C.
- Place steps 4 and 5 on a chilled plate and sprinkle with croutons.
