Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Clean the shrimp and remove the moisture.
- Make a batter with egg, starch, and flour and coat the shrimp.
- Deep-fry the battered shrimp twice in 170C cooking oil.
- Mince the scallion, garlic, and ginger.
- Heat chili oil in a pan, add the ingredients from step 4 and stir-fry, then add rice wine, doubanjiang (Chinese chili bean paste), and ketchup and stir-fry, then add water and season with sugar and vinegar.
- Reduce slightly, then add the fried shrimp and peas, adjust the thickness with a starch slurry, and add sesame oil at the end.
💡 TipLow-sodium chili sauce can make up for the flavor by adding spiciness with chili oil and the like.
