Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Blend the soy milk and tofu in a blender with 100g of drinking water.
  2. Peel the zucchini in a spiral and julienne it, and thinly julienne the onion and the red and green chili peppers.
  3. Tear the button mushrooms into thin strips and stir-fry.
  4. Stir-fry the zucchini, carrot, green chili pepper and red chili pepper separately.
  5. Boil the buckwheat noodles and set aside.
  6. Put the buckwheat noodles in a bowl, arrange the garnishes on top, and finish by pouring the blended tofu soy milk over them.
💡 TipGarlic oil is used instead of salt to add aroma when stir-frying the vegetables, lowering sodium, and blending soy milk and tofu increases nuttiness for a non-salty cold soybean noodle dish.
