Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Slice the eggplant on the diagonal and halve the tomato.
  2. Marinate the salmon in parsley and olive oil.
  3. Grill the garlic until golden.
  4. Bake the marinated salmon, eggplant and tomato in an oven preheated to 180°C for about 10 minutes.
  5. Finely chop the apple, add the yuja marmalade and lemon juice, and stir-fry lightly to make the sauce.
  6. Plate the salmon, eggplant, tomato and grilled garlic, and finish by topping with the sauce.
💡 TipEggplant contains plenty of potassium, which helps excrete sodium. A sweet-and-sour sauce made with apple, yuja and lemon is served, so no extra salt is needed, reducing sodium intake.
