Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Blanch the spinach and blend it finely in a blender, and soak the gardenia fruit in warm water.
  2. Heat the finely blended spinach with the water it was blanched in, then pour it a little at a time into half of the glutinous rice flour and knead with hot-water dough.
  3. Pour the heated gardenia water a little at a time into the other half of the glutinous rice flour and knead with hot-water dough.
  4. Rest for 30 minutes, then shape into suitable sizes and pan-fry the hwajeon in an oiled pan.
  5. When one side is cooked, place a flower on top, flip, and pan-fry only briefly.
  6. Mix honey, sugar, and water in a 1:2:3 ratio and boil to make a syrup, drizzle it over the hwajeon, and garnish with thyme.
💡 TipSpinach and gardenia fruit were used in the hwajeon dough to provide flavor and color.
