↔ No White kimchi (baek-kimchi)? Store-bought kimchi works well. For cooking, older and more sour kimchi tastes better. Sauerkraut with a little gochugaru is a last resort.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Slice the konjac thinly, blanch it, and soak it in the white kimchi brine.
  2. Add the bay leaf, peppercorns, and rice wine to water and briefly boil the squid so that it does not become tough.
  3. Cut the bell peppers into strips and squeeze the moisture out of the white kimchi.
  4. Lay out the konjac, place the white kimchi, squid, and bell peppers on top, and roll up.
  5. Tie it firmly with a garlic chive so that it does not come undone.
  6. Trim the bottom and arrange on a plate.
💡 TipAdding bell peppers gives sweetness without adding sugar.
