Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Stir-fry the anchovies and dried pollack strips over low heat for 5 minutes, then add the remaining broth ingredients and water (1 L); once it boils, simmer for 30 minutes and strain through a sieve.
  2. Finely chop the strained anchovies; remove the shell and innards from the abalone and score it; cut the zucchini, shiitake mushrooms, carrot, and egg garnish into thin strips.
  3. Mix the anchovy seasoning sauce ingredients into the finely chopped anchovies to make the anchovy seasoning sauce.
  4. Pour the broth into a pot and cook the prepared abalone over low heat for 5 minutes.
  5. Heat a pan over medium heat, add cooking oil (5 ml), and stir-fry the prepared vegetables.
  6. Put the boiled noodles in a bowl, then the stir-fried ingredients, then the cooked abalone, and pour in the broth.
💡 TipThe anchovy seasoning sauce reduces the salt used. Stir-frying the anchovies and dried pollack strips over low heat before using them improves the savory flavor.
