Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Score the napa cabbage lengthwise, sprinkle with low-sodium salt, and rinse after 10 minutes.
  2. Clean and wash the radish and cut it into thin strips, cut the thin scallions into 4 cm lengths, and cut the onion into strips.
  3. In a bowl, toss the radish, thin scallions, onion, minced garlic, minced ginger, and the seasoning ingredients (excluding the sesame seeds and low-sodium salt) to make the seasoning.
  4. Toss the napa cabbage, salted with low-sodium salt and rinsed, evenly with the kimchi seasoning.
  5. Sprinkle with sesame seeds to finish.
💡 TipGeotjeori, in which the cabbage is salted for only a short time, has less sodium than regular kimchi. Using low-sodium salt lowers the sodium content.
