Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Peel the mandarin orange, blend it in a blender, and strain through a sieve.
  2. Cut the napa cabbage into 3×3cm pieces, salt them, and drain in a sieve. Cut the water dropwort and red chili pepper into 3cm lengths.
  3. Add the gochugaru, ginger juice and minced garlic to the mandarin juice to make the kimchi brine, then pour the brine over the cabbage, water dropwort and red chili pepper and let it ripen at room temperature for 2 days.
💡 TipMandarin oranges, rich in vitamin C, help metabolism, strengthen skin and mucous membranes, and are excellent for preventing winter colds. The sweet-and-sour taste and aroma of the mandarin can bring out flavor in a mildly seasoned dish.
