Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Briefly blanch the octopus and cut into bite-size pieces.
  2. Cut the cucumber, carrot, shiitake mushrooms, and eggplant into thin rounds, and lightly grill the eggplant and shiitake mushrooms.
  3. Make a sweet vinegar pickling liquid with sugar, vinegar, and water, and pickle the cucumber, carrot, grilled eggplant, and shiitake mushrooms in it.
  4. Place the octopus on the ingredients from step 3 and wrap with blanched water dropwort.
  5. Finely chop the apple.
  6. Make a sauce with the apple, soy sauce, gochugaru, sugar, vinegar, and sesame seeds and serve with the rolls.
💡 TipThe tangy-sweet pickling liquid takes the place of saltiness.
