Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Put water, dried kelp, and green onion in a pot and boil over low heat for 30 minutes to draw out the flavor.
- Strain through a sieve to make kelp broth.
- Slice the pen shell adductor muscle thin.
- Peel the carrot, wash the vegetables and mushrooms well, and cut into bite-size pieces.
- Put the sauce ingredients in a pot and boil over low heat for 5 minutes to make a dipping sauce.
- Put the broth from step 1 in a shabu-shabu pot and, when it boils, lightly cook the pen shell muscle, vegetables, and mushrooms and dip in the sauce to eat.
💡 TipAdding onion and garlic when boiling the sauce ingredients makes a sauce with a mild sweetness and garlic aroma.
