Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Boil water (3 cups) and the seasonings in a pot for 5 minutes, then add the pork belly and boil over medium heat for 15 minutes.
  2. Peel and seed half of the melon, then chop it finely.
  3. Mix the chopped melon with the nuts and the low-sodium ssamjang ingredients.
  4. Cut the chives into bite-size pieces and seed the other half of the melon.
  5. Spread the chives on a plate and arrange the pork belly neatly on top.
  6. Fill the seeded melon half with the low-sodium melon ssamjang to finish.
💡 Tip- We used melon, chives, and nuts, which are rich in potassium that helps flush out sodium. - Apple juice is used instead of sugar for the ingredients' natural sweetness and to reduce sugar. - Perilla seed powder brings out a nutty flavor.
