Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Squeeze all the water out of the tofu, mash it, and mix with the starch and egg.
  2. Cut the burdock root, ginseng, and potato into very fine strips and soak in cold water.
  3. Stir-fry each of the vegetables separately and mix them together.
  4. Make the sauce with the peanut butter.
  5. Lay out a bamboo rolling mat, place plastic wrap on it, and spread the tofu over it.
  6. Place the stir-fried vegetables on the tofu, roll it up, steam in a steamer, let it cool, and cut into bite-sized pieces.
💡 TipPeanut butter and sesame seeds add nuttiness to the sauce, reducing the sodium from the miso, and root vegetables that help flush out sodium each add their own aroma to bring out the flavor of the mild tofu.
