Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the tofu into pieces 3cm in length and thickness on all sides, sprinkle with herb salt to draw out all the moisture, hollow out the center, and coat with flour.
  2. Season the filling ingredients evenly and fill the hollowed-out tofu.
  3. Wrap the filled tofu in gim and grill slowly in a pan.
  4. Slice the sweet potato, kabocha squash and asparagus.
  5. Mince the garlic and tomato separately, stir-fry in oil, add the red wine, and reduce. Just before turning off the heat, add the butter to make the sauce.
  6. Grill each of the vegetables, put the grilled tofu steak on a plate, and finish by pouring the red wine sauce over it.
💡 TipThe filling inside the tofu is seasoned with red wine and balsamic vinegar to reduce sodium and also to mask the smell of the tofu.
