Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely chop the ginger and garlic.
  2. Wash the semi-dried pollack, then season lightly with minced garlic, minced ginger, salt, and pepper.
  3. Boil the dried anchovies and kelp in a pot to make a broth, then remove them.
  4. Wash the radish, scallion, onion, lotus root, burdock root, zucchini, oyster mushrooms, shiitake mushrooms, and Cheongyang chili pepper, and cut into bite-size pieces.
  5. Add the vegetables, except the scallion, Cheongyang chili pepper, and garland chrysanthemum, to the broth and boil, then season with the ground perilla seeds and sea salt.
  6. Finally, add the semi-dried pollack and boil, skimming off the foam, then top with the scallion, Cheongyang chili pepper, and garland chrysanthemum.
💡 TipThe potassium found in abundance in root vegetables such as lotus root and burdock root reduces sodium absorption.
