Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Soak the spare ribs in cold water to remove the blood.
- Remove the ribs from the water, put them in a pot, and boil to make a broth.
- Blanch the mugwort, cut the carrot and potato into bite-size pieces, and slice the red chili pepper and Cheongyang chili pepper on the diagonal.
- Finely mince the blanched mugwort.
- Knead the glutinous rice flour with the minced mugwort and hot water (ikban), put it in a plastic bag, and let it rest.
- Cut the rested glutinous rice dough into small pieces and roll the middle to make jorangi mugwort rice cakes (tteok), then boil briefly in the broth with the prepared vegetables.
💡 TipMaking the broth with bones adds calcium and also gives a nutty flavor even with little salt.
