Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Put the broth ingredients in a pot, boil for 10 minutes, and strain.
- Mince the garlic, julienne the onion, and slice the zucchini into flat half-moons.
- Cut the sweet cabbage into 5cm pieces, slice the green onion on the diagonal, and cut the tofu 0.5cm thick.
- Mix the doenjang with the shiitake mushroom powder, raw soybean powder and broth (50g).
- Dissolve the doenjang in the broth and boil, adding the minced garlic, zucchini, onion and sweet cabbage in that order.
- When it boils, add the dried shrimp and green onion and boil a little longer to finish.
💡 TipSoybean powder and shiitake mushroom powder are mixed into the doenjang to reduce salt, and dried shrimp adds savory depth, lowering sodium intake.
