Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely mince the shrimp and mix with the egg white, salt, and pepper so the seasoning soaks in.
  2. Mix the minced water chestnuts and scallions into step 1 and fill the lychees, which have had their moisture removed with a paper towel.
  3. Coat the stuffed lychees with starch and deep-fry in oil.
  4. Heat olive oil in a pan and lightly stir-fry the minced onion, garlic, and ginger.
  5. Add water, chili oil, sugar, salt, and pepper to step 4 to season, then adjust the thickness with a starch slurry.
  6. Peel the potato, slice it thinly with a mandoline, soak in water to remove the starch, and fry; spread on a plate and top with steps 3 and 4.
💡 TipCanned water chestnuts and lychees can be used.
