Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Boil water (500 ml) and the kelp (2 g) in a pot for 3 minutes, then remove the kelp to make the broth.
  2. Cook the mackerel in an air fryer at 180°C for 10-15 minutes.
  3. Finely chop the onion, garlic, button mushroom, and cheongyang chili pepper, and cut the perilla leaves into thin strips.
  4. Heat a pan over medium heat with oil, add the chopped onion, garlic, button mushroom, and soy sauce and stir-fry for 2 minutes, then add the soaked brown rice and stir-fry for 2 minutes.
  5. Add the kelp broth (250 ml) in 2-3 additions to cook the brown rice, then add the black bean soy milk and simmer; stir in the lemon juice and chopped cheongyang chili pepper.
  6. Put the brown rice risotto in a bowl and top in this order: grilled mackerel, shredded perilla leaves, egg yolk.
💡 TipVarious flavorings such as lemon and perilla leaves make up for the saltiness.
