Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Slice the daepa, and wash the spinach clean and remove the moisture.
  2. Heat a pan over low heat with olive oil, add the soaked chickpeas, and stir-fry for 3 minutes.
  3. Pour in water (5 cups) and boil over medium heat; when the water reduces, add the milk and simmer until it has reduced by half.
  4. Blanch the spinach in boiling salted water (5 cups water + 0.5 tbsp coarse sea salt) for 5 minutes, rinse in cold water, and squeeze out the water thoroughly.
  5. Blend the simmered chickpeas, blanched spinach, lime juice, white pepper, and nutmeg powder in a blender until smooth to finish.
💡 Tip- Spinach, high in potassium, helps flush out sodium. - Lime juice makes up for the mild taste.
