Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Clean the pork well and mince it finely.
- Cut the tofu into 1cm squares.
- Remove the skin and seeds of the tomato and cut it to the same size as the tofu.
- Stir-fry the scallion and ginger in an oiled pan until fragrant, then add step 1, stir-fry, and set aside separately.
- Add the tomato, tofu, and meat to an oiled pan and stir-fry, pour in just enough stock to barely cover, and season with soy sauce and salt.
- When the sauce has reduced, add the tofu and adjust the sauce thickness with the starch slurry.
💡 TipDissolving the starch in the stock improves the aroma of the dish. Take care not to crush the meat, tofu, or tomato, and the whole dish should have a soft texture.
