Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Mix the egg whites and oligosaccharide syrup (50 g) to make a meringue, and mix in the almond flour, stevia, cake flour, and green tea powder.
  2. Put the batter in a piping bag, pipe it into round molds, and bake in a 170°C oven for 15 minutes.
  3. Mix the mascarpone cheese (20 g) and sugar until smooth, mix in the heavy cream (120 g), and adjust the thickness with gelatin.
  4. Boil the sweet pumpkin, stir-fry it to evaporate the moisture, and mix in the oligosaccharide syrup, cinnamon powder, and mascarpone cheese.
  5. Mix the heavy cream (90 g) well into step 4 and adjust the thickness with gelatin.
  6. Lay down the green tea dacquoise and pipe on the cheese cream and then the sweet pumpkin cream, in that order.
💡 TipThe sweet pumpkin provides natural sweetness.
