Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Put the soup anchovies and dried kelp in 2/3 cup of water and boil to make a broth, and use this heat to steam the Swiss chard on a steaming rack.
  2. Finely chop the kelp used for the broth and cook multigrain rice with the rice, brown rice, and barley.
  3. Lightly stir-fry the small dried anchovies in a dry pan and mince them; chop the nuts with a knife as well.
  4. Mince the onion and green onion.
  5. Mix the gochujang, doenjang, nuts, onion, minced garlic, plum syrup, green onion, and anchovy-kelp broth to make the anchovy nut ssamjang.
  6. Place about 30 g (1 spoonful) of rice on the chard, add about 5 g of anchovy nut ssamjang, and wrap with the chard leaf.
💡 TipInstead of Swiss chard, you can use aster greens (chwinamul), cabbage leaves, or pumpkin leaves.
