Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Combine the bread flour, honey, egg, yeast, salt, skim milk powder, bread improver, and water in a mixer and mix.
  2. When all the flour has dissolved and combined, add the butter and mix completely, then divide the dough into three portions.
  3. After a first rise of 60 minutes, divide into 40 g pieces, shape them into rounds, and let rest for 15 minutes.
  4. Roll the dough by hand into a blunt cone shape, then roll it out with a rolling pin into a long triangle.
  5. Place soft persimmon and walnuts, dried persimmon and jujubes, and blueberries and cranberries into the respective doughs and shape them into butter rolls.
  6. After a second rise of 40 minutes, bake in a 210°C oven for 10 minutes.
💡 TipPutting various fruits and nuts such as soft persimmon, dried persimmon, and blueberries inside the butter rolls makes them taste good without using sugar in the dough.
