Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Wash the rice and turmeric rice well, soak for about 30 minutes, and cook.
  2. Soak and boil the bracken fern, chop it finely, and stir-fry with the low-sodium soy sauce.
  3. Julienne the tofu and carrot, and cut the zucchini into half-moon shapes and stir-fry.
  4. Trim the tails off the mung bean sprouts and blanch briefly.
  5. Blanch the pumpkin leaves in boiling water.
  6. Mix the gochujang, oligosaccharide syrup, and grated pineapple to make a sauce; put the stir-fried turmeric rice, tofu, and vegetables on the blanched pumpkin leaves, add the gochujang sauce, and roll into rounds to finish.
💡 TipMixing fruit into gochujang reduces sodium and makes a mild gochujang sauce.
