Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Soak the rice in water and cook it, and cut the eggplant lengthwise and grill it in a pan.
- Finely chop the onion and garlic.
- Chop the tomato into small pieces.
- Blanch the shrimp with sake and peel them.
- Heat olive oil in a pan and stir-fry the onion and garlic first.
- Add the tomato sauce and ketchup to the stir-fried onion and garlic, then add the tomato and sugar and stir-fry and reduce. Put the rice in a bowl, add the grilled eggplant and shrimp, pour the reduced tomato sauce over the top, and lightly add the baby greens to finish.
