Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Grate the pear into the dongchimi, season with sugar and vinegar, and keep it in the refrigerator.
- Cut the onion into thin strips and slice the cucumber and carrot, then lightly brine them in salted water.
- Season the ground beef with the minced green onion, minced garlic, plum syrup, sesame oil, toasted sesame seeds, pepper, sake, sugar, and soy sauce.
- Knead the seasoned beef well and shape it into round tteokgalbi patties, then let them rest in the refrigerator.
- Gently cook the rested tteokgalbi in a lightly oiled pan and put them on a napkin to drain the oil.
- Boil the noodles in boiling water, rinse several times in cold water, drain, and put in a bowl. Top with the tteokgalbi, pour in the chilled dongchimi broth, and top with cucumber, carrot, and onion as side vegetables to finish.
💡 TipThe pear and the dongchimi broth go together to lower the sodium.
