Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak the shiitake mushrooms, remove the stems, boil them in boiling water, and drain.
  2. Season the prepared shiitake mushrooms with soy sauce, minced garlic, and sesame oil.
  3. Peel the lotus root, cut into cubes, and soak in vinegar water.
  4. Cut the bell peppers into diamond shapes and cut the broccoli into bite-sized florets.
  5. Coat the prepared ingredients thoroughly with starch and deep-fry in cooking oil at about 170C.
  6. Add the red wine, soy sauce, vinegar, and sugar and simmer for about 20 minutes to reduce, then adjust the thickness with a slurry of starch and water and pour over the fried ingredients from step 4.
💡 TipThick sauces containing starch do not taste bland even with little salt, so using them well is good for low-sodium cooking.
