Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Mince the garlic, onion and pear, and mix them with the gochujang, wasabi, gochugaru, oligosaccharide syrup and apple cider vinegar to make the gochujang sauce.
  2. Slice the eggplant lengthwise, remove the leaves from the water dropwort, and julienne the bell peppers.
  3. Steam the eggplant and blanch the water dropwort and bacon. Layer the bacon, eggplant and bell peppers in that order, roll them up, tie with the water dropwort, put on a plate, and finish by drizzling with the sauce.
💡 TipThe bacon is blanched in boiling water to remove salt and eaten with eggplant, which is rich in potassium, to help excrete sodium. Wasabi, vinegar and oligosaccharide syrup in the sauce give a spicy and sweet-and-sour taste.
