Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the radish and napa cabbage into pieces about 1 x 4 x 1 cm.
  2. Cut the beet into pieces about 2 x 4 x 0.3 cm.
  3. Cut the carrot into decorative shapes.
  4. Blend the peeled apple with water in a 1:1 ratio and strain through a sieve to remove the solids.
  5. Add vinegar to step 4 in a 2:1 ratio, add the bay leaves and peppercorns, and bring to a boil.
  6. Add the prepared radish, napa cabbage, beet, and carrot, and let cool.
💡 TipAdding blended apple reduces the sugar, and the peppery bite of the peppercorns keeps the pickles tasty even with little sweetness.
