Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely crush the black sesame seeds, mix with the breadcrumbs, and toast in a dry pan.
  2. Boil the ramyeon noodles, drain, remove the moisture, then coat in beaten egg and then starch in that order.
  3. Mix the ground beef with the chopped peanuts, knead, and shape into suitable sizes.
  4. Wrap the mixture in the ramyeon noodles, coat in beaten egg and then breadcrumbs, and fry.
  5. Put the whole cinnamon sticks and ginger in water (200g), boil to steep, remove the solids, then add the remaining sauce ingredients and reduce lightly.
  6. Make the balsamic dressing and drizzle it over the baby greens, halve the cherry tomatoes, and plate them with the ramyeon croquettes to finish.
💡 TipThe ramyeon noodles are blanched in boiling water beforehand to reduce the salt.
