Steps
Translated from the Korean original. Amounts are as in the original recipe.
- (Sauce) Chop all the sauce ingredients. Stir-fry the onion first in an oiled pan, add the remaining ingredients and stir-fry, then add water and simmer until reduced.
- Mix the dough ingredients at 27°C to the final stage, then ferment at a high temperature of 27°C for 1 hour (first rise).
- Divide into 150 g pieces, shape, and place on a linen cloth. * The dough is very wet. If it sticks to your hands, work with a sprinkle of dusting flour.
- Let the dough rise at 30°C and 75% humidity for 60 minutes (second rise), then place on a baking pan.
- Spread the prepared tomato sauce over the dough and bake with steam at 160°C/230°C for 13 minutes.
- Add the cheese and bake for 4 more minutes.
💡 TipWe used a ciabatta made without sugar and made the sauce with fresh tomatoes to cut back on processed ingredients.
