Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the radish, green chili pepper, Korean water dropwort, and green onion into bite-sized pieces.
  2. Blanch the pork head starting in cold water. Putting the pork head in while the water is still cold lets the impurities be removed as the water comes to a boil.
  3. Dissolve the miso and strain through a sieve.
  4. Lightly simmer the pork head.
  5. Bring the broth to a boil in a pot, then add the vegetables and boil.
  6. Blanch the udon noodles in the broth to finish.
💡 TipPairing the heat of green chili peppers with the heat of whole peppercorns lowers the sodium while making a clean, refreshing broth.
