Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Clean the chicken well and cut it into parts.
  2. Put the Siberian ginseng, green onion, kelp, garlic, and dried shrimp in a pot and simmer gently, then add the chicken, boil for about 20 minutes, remove it, and shred the meat.
  3. Julienne the onion and cucumber and quick-pickle them with vinegar, sugar, and salt.
  4. Mix mustard powder with water at about 30°C (86°F) evenly and let it ferment, then add sugar, vinegar, and salt to make a mustard sauce.
  5. Place the white konjac, the konjac mixed with beet and gardenia powder, and julienned kelp on a plate.
  6. Arrange the pickled onion and cucumber and the shredded chicken on one side, and add the mustard sauce just before eating.
💡 TipThe natural seasoning components in kelp and dried shrimp can take the place of sodium.
