Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Soak in water mixed with vinegar to remove the bitterness.
- Pat the brined deodeok completely dry with paper towels.
- Cut the onion, green chili pepper, and red chili pepper on the diagonal.
- Slice the beet and make the broth.
- Put the deodeok in a bowl first and let it soak for about 30 minutes so it absorbs a little of the liquid.
- Add the remaining ingredients too and let the flavor soak in, and it can be eaten after 24 hours.
💡 TipDeodeok is normally soaked in salted water to remove its bitterness, but soaking it in vinegar instead keeps salt from soaking into the deodeok, and ginger syrup gives a spicy-sweet taste that adds depth to the broth.
