Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Finely chop the pork, tofu, and crunchy chili pepper; cut the eggplant diagonally into 4 pieces and make a slit in the middle of each.
  2. Season the ground pork, then mix in the chopped tofu and chili pepper.
  3. Stuff the slit eggplant with the seasoned pork and coat with frying flour.
  4. Fry the floured eggplant twice for 7-8 minutes in cooking oil (100 ml) preheated to 180°C.
  5. Boil the eggplant sauce ingredients and water (100 ml) in a pot for 4 minutes.
  6. Put the fried eggplant on a plate and pour the eggplant sauce over it.
💡 TipEggplant is low in calories, high in water, and rich in potassium, which helps flush out sodium.
