Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Sprinkle the pork belly with glasswort, salt, and pepper and let it rest.
  2. Cut the garlic chives into about 6 cm lengths, cut the onion into thin strips, and slice the carrot flat.
  3. Finely chop the soft tofu.
  4. Mix the ssamjang, sugar, and heavy cream evenly into the citron syrup.
  5. Mix the chopped soft tofu into the mixed citron syrup, put it in a pot, add the cut onion and carrot, and gently boil to make the sauce.
  6. Lightly grill the rested pork belly in a pan with melted butter, then cook it in the oven for about 20 minutes and slice into bite-sized pieces. Spread the garlic chives on a plate, place the grilled pork belly on top, and top with the sauce to finish.
💡 TipGlasswort powder reduced the use of sodium.
