Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Divide the flour into three portions, add mulberry leaf, pumpkin, and prickly pear powder respectively along with olive oil, knead into doughs, and let them rest in plastic bags.
  2. Cut the chicken into small pieces, sprinkle with ginger, sake, salt, and pepper, and let it rest.
  3. Remove the seeds from the bell pepper and green pepper and cut into small cubes, and chop the perilla leaves finely.
  4. Take out the rested doughs, roll each out with a rolling pin, cut into pasta thickness, blanch the noodles, and put them on a plate.
  5. Coat the rested chicken (2) in a batter of starch and egg and deep-fry twice in oil at 170 C, then drain the oil.
  6. Place the fried chicken (5) on the pasta noodles (4). Boil the cream sauce in a pot, add the sugar, and when it boils again add the bell pepper, green pepper, and perilla leaves (3), boil once more, and pour it over the kkanpung pasta to finish.
💡 TipThe nutty flavor of the cream sauce was used to lower the sodium.
