Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Soak the L.A.-style short ribs in water to remove the blood and bone dust.
  2. Finely grate the pear and onion on a grater.
  3. Add the pear juice and onion juice to the bloodless ribs and let them rest.
  4. Put the low-sodium soy sauce, bay leaves, whole peppercorns, oligosaccharide syrup, sake, sugar, water, and plum syrup in a pot, gently boil for about 30 minutes, and cool.
  5. Add the green onion, garlic, sesame oil, and toasted sesame seeds to the cooled soy sauce.
  6. Add the seasoning to the rested L.A.-style ribs, let them rest for another day, and grill in a pan to finish.
💡 TipBay leaves and whole peppercorns give depth of flavor, making ribs with a deep taste even without salt.
