Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Cut the oyster mushrooms, button mushrooms, shiitake mushrooms, tofu, zucchini, onion and peeled chestnuts into 1cm cubes, and halve the walnuts.
- Add perilla oil to an earthenware pot, lightly stir-fry the walnuts and chestnuts, then add the ingredients except the tofu and stir-fry.
- Pour in the anchovy and kelp broth and boil.
- Add the ground perilla seeds and tofu and boil until thick to finish.
💡 TipUnlike a basic soup seasoned with doenjang, ground perilla seeds are used to reduce sodium while adding a nutty flavor.
Diet and allergy labels are estimated from the ingredient list. Check labels if you have an allergy.
