Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Spread the pork loin out wide, rub with salt, pepper, and olive oil, and let it rest.
  2. Heat the milk, add the lemon juice, and when it curdles, strain it through cheesecloth to make ricotta cheese.
  3. Coarsely chop the onion, tomato, garlic, and apple and mix with the ketchup.
  4. Spread the ricotta cheese on the rested loin.
  5. Add mozzarella cheese on top of the ricotta-topped loin, cover with another piece of loin, coat in flour, beaten egg, and breadcrumbs in that order, deep-fry at 170-180 C for about 3 minutes, and drain the oil.
  6. Stir-fry the prepared sauce (3) in a pot, add the tonkatsu sauce and boil once more, then serve with the fried ricotta pork cutlet (5) to finish.
💡 TipSodium intake was lowered by using homemade ricotta cheese rather than store-bought.
