Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Make a teriyaki sauce from the seasoned soy sauce using the sauce ingredients.
  2. Clean the fish, remove the moisture, and season it lightly with white pepper.
  3. Cut the ginger into very fine strips and rinse in cold water.
  4. Cut the green onion into very thin strips and soak in cold water to remove its sharpness.
  5. Grill the Spanish mackerel over low heat in a pan with butter.
  6. Simmer the grilled fish in the sauce and top with the green onion strips. Drizzle the sauce over the mackerel and top with the ginger strips to finish.
💡 TipCoffee masks the fishy smell of the Spanish mackerel, and the seasoned soy sauce, made with a vegetable ferment, keeps the saltiness low while preserving depth of flavor.
