Steps
Translated from the Korean original. Amounts are as in the original recipe.
- Boil the black beans in a pot for 20 minutes, strain, and mash to make a black bean puree.
- Add the sugar to the egg whites little by little and whip into a stiff meringue. Add the egg yolks and cake flour to the meringue and fold in with a cutting motion to make the meringue batter.
- Divide the meringue batter and mix each portion with a puree to make 3 batters.
- Fill paper cups about two thirds full with each batter and microwave for 50-55 seconds.
- Cool for 10 minutes and remove from the paper cups.
- Cut into shapes, sprinkle with herb powder, and put on a plate to finish.
💡 TipThe natural sweetness of ingredients such as black beans, kabocha squash, and beet reduces the sugars used.
