↔ No gochujang (Korean chili paste)? Sriracha or another chili paste with a little miso and honey gets close. It won’t have the same fermented depth.

  • gochugaru (Korean chili flakes)고춧가루(1/2 tbsp)
↔ No gochugaru (Korean chili flakes)? Mix 2 parts sweet paprika with 1 part cayenne or red pepper flakes. Less smoky and a bit hotter, so start with half.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Cut the onion and basil into thin strips, and halve the hard-boiled egg.
  2. Soak the sliced onion in cold water, then drain in a sieve to remove the moisture.
  3. Blend the bibim sauce ingredients in a blender to make the bibim sauce.
  4. Boil the rice noodles in boiling water (8 cups) for 2 minutes, rinse in cold water, and drain in a sieve.
  5. Top in a bowl in this order: rice noodles, bibim sauce, onion and basil, egg, and serve.
💡 TipMaking the bibim sauce with tomatoes reduces the gochujang used. With the onion and basil, you can enjoy it fresh like a salad.
