Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Remove the bases of the mushrooms and cut into bite-size pieces, julienne the onion, and slice the green onion and cheongyang chili pepper on the diagonal.
  2. Chop the tomato very finely.
  3. Make the doenjang seasoning.
  4. Put the broth ingredients in a pot and boil for 15 minutes, remove the solids with a sieve, then dissolve the doenjang seasoning through the sieve.
  5. Add the mushrooms and boil, then add the tomato, minced garlic, gochugaru, ground perilla seeds and julienned onion and boil.
  6. Add the sliced green onion and cheongyang chili pepper and boil a little longer to finish.
💡 TipSoybean powder and yogurt are used in the doenjang seasoning instead of doenjang, so the nutty taste of soybean powder and the tang of yogurt reinforce the saltiness, and ground perilla seeds, a natural seasoning, are added to reduce sodium intake.
