Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Mix the glutinous rice flour and cooked rice evenly into the beef and pork.
  2. Add the green onion, pepper, soy sauce, mirin, and heavy cream to the mixed meat (1), mix well, and let it rest for at least 30 minutes.
  3. Chop the king oyster mushrooms, blanch the spinach in hot water, squeeze out the moisture and chop it finely, and chop the carrot as well.
  4. Chop the onion and garlic and stir-fry them.
  5. Soak the tteokbokki rice cakes briefly in hot water until soft, then take them out and chop finely.
  6. Knead the rested meat (2) with the chopped vegetables (3), the stir-fried garlic and onion (4), and the rice cakes (5) until well mixed. Shape into small tteokgalbi patties and cook in an oiled pan, turning to cook both sides. Boil the soy sauce and oligosaccharide syrup in a pot, add the cooked patties, and simmer down until just a little sauce is left to finish.
💡 TipTteokgalbi made with rice and rice cakes lowers the sodium, and the chewy texture makes it taste even better.
