↔ No young summer radish kimchi (yeolmu kimchi)? Store-bought kimchi works well. For cooking, older and more sour kimchi tastes better. Sauerkraut with a little gochugaru is a last resort.

Steps

Translated from the Korean original. Amounts are as in the original recipe.

  1. Boil the pasta in hot water and drain.
  2. Stir-fry the sliced cheongyang chili pepper in raw perilla oil, then stir-fry the noodles.
  3. Stir-fry the boiled noodles with the stir-fried cheongyang chili pepper.
  4. Thinly slice the young radish kimchi and lightly stir-fry it in perilla oil.
  5. Peel the cucumber in a spiral and julienne it, and julienne the green chili pepper, bell peppers of 2 colors and carrot and stir-fry each separately.
  6. Stir-fry the pasta noodles with the cheongyang chili pepper once more together with the stir-fried vegetables to finish.
💡 TipNo special seasoning is used; the heat of cheongyang chili pepper and the sour, refreshing taste of the young radish kimchi replace saltiness.
